Drink of the Month: Mango and Cardamom Caipirinha from Cantina
2 ounces Cabana
1/2 ounce cardamom syrup*
2 1-inch wedges peeled, diced mango
1 lime, quartered
1 tablespoon Turbinado sugar
*Cardamom syrup
2 tablespoons whole green cardamom pods
2 cinnamon sticks
2 cups water
1 cup white sugar
1 cup Demerara sugar
To make the syrup: Crack the cardamom and cinnamon and toast them gently in a dry frying pan. Bring water to a boil in a medium pot. Add the spices, cover and return to a boil. Add sugar, reduce heat and simmer for 10 minutes. Cool, then strain the spices out, reserving the syrup.
To make the cocktail: In a shaker, muddle the lime quarters and mango with both the Turbinado sugar and the cardamom syrup. Add ice and shake vigorously for 15 seconds. Pour entire contents into an old-fashioned glass filled with ice.
