New pots, new crew: the view into SPQR's kitchen

When Jessica and I realized we had both separately made reservations at the “new” SPQR, we decided to write up our observations without first comparing notes. Although we’re two people that share some tastes, Jessica’s been far more of an SPQR aficionado than I have been. She loves rich and rustic, where I often like things a bit lighter and refined. Despite this, our two takes on one restaurant (no cheating allowed), turned out to be very similar. —Sara Deseran

A Heritage Hog Weekend

(event)
$145

Five chefs, five pigs, five winemakers. The battle of the pork begins with Ryan Farr, 4505 Meats; Nate Appleman, A16/SPQR; Staffan Terje, Perbacco; Ravi Kapur, Boulevard; and Peter McNee, Poggio Trattoria. Each chef will each prepare a 100-pound heritage breed hog from head to toe for this friendly competition. The winner will be crowned "Prince of Porc." Sample vino from Krupp Brothers, Hirsch Vineyards, Elk Cove Winery, Arcadian Winery and K. Vintners/Charles Smith's Wines while you watch a porchetta demo by Taylor Boetticher of Fatted Calf. Sounds like a real meatfest.

More accolades for A16 chef Nate Appleman.

This just in: Nate Appleman, pizzaiolo, San Francisco darling, butcher extraordinaire and chef of A16 and SPQR, has been named one of Food and Wine Magazine's Best New Chefs of 2009. He's joined on the list by Chris Kostow, chef at Meadowood in St. Helena, giving the Bay Area ample representation on the New York-based mag's list. Congratulations! And also, oh no! Now we'll never be able to get a table.

12/16/085:15 pm

Dine out on December 18 and you'll be helping the 150,000 San Franciscans who don't have enough to eat. Ten percent of the proceeds earned by restaurants participating in the Dine Out Against Hunger (including Maverick, A16, Americano, Sociale, Delfina, Foreign Cinema, Incanto, Kuleto's, Magnolia, Range, Serpentine, Slow Club and SPQR) will be donated to the San Francisco Food Bank.

Sharp Shooter: Beretta Hits the Bull's-Eye

Beretta draws in the crowds with cocktails and Italian.

Beretta draws in the crowds with cocktails and Italian.

Though there's no surefire formula for restaurant success in San Francisco, three assets can guarantee a long waiting list for a table: Italian food, great cocktails and a location at the intersection of up-and-coming and cool. If a restaurant is able to pull off this trifecta with panache, it's well on the way to becoming indispensable.

Palmer Does Healdsburg

Charlie Palmer talks pigs, pinot and possibly moving to SF

Charlie Palmer talks pigs, pinot and possibly moving to SFSan Francisco is a city that loves its local chef celebrities, but one that has yet to lure big name chefs from elsewhere (paging Mario Batali). But just a few hours to the North, in Healdsburg, there’s a celeb in our midst: Charlie Palmer. It would be fair to call Palmer an “old-school” chef—he’s classically trained with a good French foundation and opened his first restaurant, Aureole, in New York City in 1988 when he was only 28.

A good idea just keeps getting better for the sequels to these much-loved restaurants.

A good idea just keeps getting better for the sequels to these much-loved restaurants.Since ravenous diners can’t get enough of a good thing, the only solution is to offer more. And that’s exactly what the chefs and owners of these local hot spots did. While it might’ve been hard to live up to the buzz, there is no sibling rivalry here. These seven spin-offs come with a fresh twist and manage to make a name for themselves.

Rome If You Want To

A taste of the Eternal City comes to San Francisco.

A taste of the Eternal City comes to San Francisco. It’s sweet to hear tattooed tough-guy chef Nate Appleman refer to Daniel Holzman, his co-executive chef at SPQR, as his BFF (text-message shorthand, of course, for “best friend forever”). Since meeting 10 years ago  at the Culinary Institute of America in Hyde Park, the two have been in near constant contact—advising each other on career moves and engaging in screaming matches in the kitchen at Campton Place, where they both  worked.
