When you think "flan" you probably think of the sweet, caramel custard eaten for dessert throughout Mexico and Latin America. Presidio Social Club turns the dish on its head with this savory rendition that uses creamy goat cheese as the base of this classic dish. Served with a side of crackers or toast and a smear of a fresh bright green pea sauce, this is the perfect start to any meal. Use the recipe below for your new favorite appetizer!
For the Goat Cheese Flan
5oz goat cheese
½ cup cream
2 large eggs
2 Tablespoons lemon juice
¼ teaspoon toasted Indian coriander
¼ teaspoon toasted fennel
1 Tablespoon of kosher salt
1. Mix all ingredients together in a large bowl. Check for seasoning and adjust if needed.
2. Spray 6 3oz ramekins with vegetable spray, then pour mixture into the ramekins, stop ¼'' from the top.
3. Place the ramekins in a baking pan and fill with water until it reaches almost half way up the side of the ramekin. Cover with aluminum foil.
4. Place in the oven at 350 degrees and cook for 20-30 minutes or until the custard has set.
For the Pea Sauce:
½ cup white wine
1ea chopped shallot
1 Tablespoon chopped tarragon
¼ cup cream
1# fresh shelled English peas
3 cups vegetable stock
1 Tablespoon of kosher salt
1. Sweat shallot for 20 seconds and add the wine. Reduce by half.
2. Add the cream and tarragon and reduce by half
3. Add the vegetable stock and bring to almost a boil. Add peas then turn off the heat.
4. Let rest for 2 minutes then blend using a blender.
5. Check for seasoning and adjust if needed.
1. Place some of the pea sauce on the plate.
2. Flip the ramekin onto the plate and allow the custard to slide out.
3. Garnish with some crackers or toast and some pea sprouts and devour.
