Tahitian Style French Toast
Serves 4
Ingredients:
French Toast
8 thick slices of challah or brioche bread
8 large eggs
1/2 cup half-and-half
2 tablespoons Meyer's dark spiced rum
2 tablespoons powdered sugar
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon grated orange peel
Topping
2 ripe bananas, chopped up
2 tablespoons white sugar
2 tablespoons butter
1/4 cup toasted, chopped walnuts
1/4 cup heavy whipping cream
1. Preheat oven to 225 degrees.
2. Preheat griddle on high, then turn to medium and butter griddle generously.
3. Mix together last seven ingredients in large bowl.
4. Dip each slice of bread in egg batter and soak well.
5. Cook on each side until golden brown, keeping cooked pieces in the oven to keep warm.
6. Melt butter in sauté pan, add bananas, sugar, walnuts, and cream. Cook down until thickened. (Can be made one day in advance)
7. Spread banana mixture over one piece of cooked French toast and top with another piece.
8. Top with caramel sauce and grilled bananas.
