When we recently published our 2022 Big Drink—7x7's annual list of the 50 most iconic cocktails in San Francisco—a reader instantly reached out to request the recipe for our selection from the Bernal Heights bar Holy Water.
After the Gold Rush, a bourbon cocktail with a tropical twist, takes inspiration from the Neil Young album of the same name: "It was on repeat while we were building Holy Water," says bar owner John Ottman, so "it seemed fitting to name the drink after it. Funny thing is, I didn’t realize that I basically just made a bourbon version of the Hotel Nacional cocktail!"
Ottman says the drink is easy enough for anyone to make at home. Of course, you could also pay him a visit and try any of the bar's terrific drinks as well as their carefully curated selection of hard-to-get beers on tap.

Ingredients
1.5oz bourbon (Ottman prefers Old Grand Dad Bonded)
.75oz pineapple gomme (Small Hands Foods or Super Jugoso)
.5oz Rothman and Winters apricot liqueur
.5oz fresh lime juice
Shake ingredients quickly with ice for 3-4 seconds. Double strain over fresh ice into a rocks glass, and garnish with a lime wheel.
